The Matfer Bourgeat Exopan Steel Brioche Mold is a high-performance steel pastry mold designed to create traditional brioche à tête, with a fluted edge that creates a unique shape in the crust. Manufactured in France, this brioche mold is made of Matfer's Exopan material, a fine steel with a nonstick coated interior and a protective enameled exterior, that are PFOA free. Exopan combines the quality of cooking in tinplate with the benefits of a nonstick surface, contributing to overall development of product color during baking. Its nonstick surface eliminates greasing resulting in a clean release during depanning. The protective enamel ensures durability that will withstand heavy use in professional kitchens. Freezer and oven safe, Exopan molds have a resistance to temperatures ranging from -4°F to 482°F. This Brioche mold is available in a choice of eight mold sizes; each is sold separately.
