The Matfer Bourgeat Exoglass Bouillon Strainer/Chinois, also known as a china cap, is a high-performance strainer designed for durability in high-volume restaurant kitchens. Manufactured in France, the Bouillon Strainer’s double-woven stainless steel mesh is fine enough to strain delicate stocks, consommes, purees, infusions, and more. Mesh is heat-bonded into a rivet-less Exoglass handle, a heat-resistant, patented polyamide material developed by Matfer that can withstand direct heat up to 430F. Steel reinforcement wires protect mesh cone from being bumped or damaged during heavy use. NSF certified. Dishwasher safe. Available in a choice of 2 sizes, each sold separately.
